ABOUT THE FARM

In our farm we have 2 coffee varieties, Lempira and Catuai. After several tryouts, we have found that applying washed or natural process in our coffees, give us better results. Coffee growing is a journey, where you experiment with different techniques or ways of processing coffee, until you get it right. One of the key factors that allows us to keep high quality coffee, is to pick only ripe red coffee cherries along with a slow drying process that takes at least 25 days.

Sometimes, the drying process may take up to 40 days depending on weather conditions. Every year, we have a new set of challenges, and that’s why we must diversify our coffee practices. For example, we have recently applied controlled fermentation process for our washed coffees. This fermentation process may last from 12 up to 48 hours, developing complex flavors and aromas on the bean.

Another process can be semi – washing coffee, in which you leave part of the cherry mucilage on the bean, concentrating higher sugars levels. Afterwards, we carry the coffee down to the sun dryers. Once the drying process is done, we will let the coffee parchment rest at room temperature for at least 2 weeks.

WHO’S THE FARMER

Reyna Dominguez

My life has been full of adventures and life lessons that brought me to where I am. When I was young, I used to sell corn flour tortillas, tamales (corn flour buns) and bread at the military base in Marcala. Nothing related to coffee, actually I’m relatively new to the coffee world, I started back in 2010, at that time I was making a living out of trading cattle and one day a friend of mine suggested that I can buy a small piece of land near Marcala and expand to new horizons, and that’s how I began to grow and process coffee.

I also enjoy the beauty of nature, and having a coffee farm brings more opportunities and that’s why I diversify our family’s income by growing vegetables and raising pigs and chickens.

FARMER’S DREAMS

Keep harvesting great quality coffee and reach to many people all around to globe so they can enjoy our coffees.

"Produce the best coffee possible, by putting all our efforts and passion to the process. Thank you Taiwan!"
