關於莊園
目前種有倫皮拉和卡杜艾兩種咖啡，經歷過多次測試，我們發現使用水洗和日曬的處理法最適合這兩種咖啡豆。對我來說，種植咖啡就像踏上一段旅程，不斷的嘗試各式各樣的技術，直到種出令人滿意的咖啡。
關鍵在於精選出足夠成熟的、色澤如鮮嫩紅的咖啡櫻桃，以及經過至少25天的緩慢乾燥處理。處理天數還得視當時的天氣而定，有時候乾燥過程可能長達40天之久。
每一年，我們都會面臨到全新的挑戰，這也是為什麼我們必須使加工處理程序盡可能的多樣化。例如，近日我們在水洗豆上運用控制發酵處理的方式，這個發酵處理過程可能會持續12到48個小時，只為使咖啡豆散發出具複雜度的風味和香氣；另一個會嘗試的處理方式是半水洗法(semi-washing)，處理過程中讓部分果漿黏液留在豆子上，保留較高的糖分，接著把漿果在日曬下乾燥，待乾燥過程結束後，再將咖啡內果皮在室溫下放置至少兩週。

我經歷過許多的冒險與人生課題的探索，使我成為現今的自己。回想年輕的時候，我曾經在瑪爾卡拉的軍事區賣過小玉米餅、麵包、還有塔馬利（一種由玉米殼包裹麵團後蒸熟的傳統美食，又稱墨西哥粽），說真的，這些食物和咖啡一點關係都沒有，相較起來我在咖啡領域中還真是個新手呢 。
2010年的時候，當時我正以養牛維生，有個朋友建議我買下一小塊靠近瑪爾卡拉的地開疆闢土，開啟新的視野，就是從那時候開始種植和加工咖啡的。
經營咖啡莊園的我不僅可以享受大自然的美麗，這片土地還藏有許多開發機會，這就是為什麼我會透過種植蔬果、養豬雞等家畜來實現收入多樣化的原因。
未來期望
希望可以持續豐收高品質的咖啡，讓世界上更多的人品嚐到我們的咖啡豆。

ABOUT THE FARM
Imagine waking up every morning to the sweet aroma of freshly picked coffee cherries. That's the reality at our farm, where we're dedicated to growing and harvesting the finest Lempira and Catuai varieties. We're always experimenting with new processing techniques, tirelessly searching for that perfect cup.
From hand-picking only the ripest red cherries, to our slow and meticulous drying process that can last up to 40 days- every step of our journey is focused on quality. Our newest innovation? Controlled fermentation for our washed coffees, unlocking a whole new world of complex flavors and aromas.
But we don't just stop there. We're constantly pushing boundaries and innovating. Like our semi-washing process, where we leave just the right amount of cherry mucilage to achieve higher sugar levels. And once our beans are dried to perfection, we give them a final rest to reach ultimate flavor maturity.
WHO’S THE FARMER
Reyna Dominguez, a woman of adventure and resilience, always looking for new opportunities. Growing up, she sold delicious corn flour tortillas, tamales, and bread at the military base in Marcala, but her journey with coffee only began in 2010.
A friend suggested she buy a small piece of land near Marcala and try something new, leading her to discover her true passion for coffee farming. Not only does Reyna take pride in growing high-quality coffee, but she also embraces the beauty of nature by diversifying her income with vegetable farming and raising pigs and chickens. Come join Reyna on her journey of discovery and taste the results of her hard work!
