ABOUT THE FARM

 For many years we have only grown 2 varieties, Catuai and Bourbon. We have conducted different experiments in processing these 2 varieties, in all the three traditional processes (washed, honey and natural). However, we’ve found that the Natural process brings the most out of them. Due to the fact that natural process coffee is basically a slow dry  fermentation process, developing fruity taste like coffees. Our purpose is to develop practices and apply techniques that will ensure quality and consistency in our coffees year by year. In our coffee process management we consider ripe cherry selection, appropriate plant nutrition and slowly sun dried practices to be fundamental in attaining consistency in our coffees.

Fabiola Fiallos

 Before getting into the coffee world, I was working at a bank. But then, destiny had a different path for my life, I fell in love and got married, little I knew that my life would make a 180 degree turn. My husband being a third generation coffee farmer, had such a great passion for coffee to which I was drawn into, and after a few years I left the financial sector to pour myself into what would turn to be the most passionate work of my life.

When I’m not busy with coffee, I listen to good music, dance or just go around riding my bike.  

FARMER’S DREAM

Become a well-recognized coffee exporting company that its foundation will be in producing high quality coffee, and one day, our legacy will be passed to our daughters. 

We picture the moment when our coffee delights consumers around the world. Knowing we are proudly representing our country and especially our region in other continent, that makes me feel so proud and satisfied!

關於莊園

這些年來,我們僅在莊園裡種植卡杜艾和波旁這兩種咖啡,也多次測試以傳統的水洗、蜜處理、日曬的方式來處理咖啡豆,最終我們發現,用自然日曬的方式最能夠帶出咖啡的風味。這是因為日曬處理的咖啡豆,會經過一個緩慢乾燥的發酵過程,從而使咖啡散發出水果香氣。
我們的目標是開發出最好的咖啡種植及處理技術,並確保咖啡質量的一致性能夠逐年提升。在咖啡的流程管理上,我們重視採用成熟的咖啡櫻桃、提供植株適當的養分,以及緩慢日曬的手法,顧好這些環節對於達到咖啡品質一致性至關重要。

莊主介紹

法比奧拉 菲洛斯

在踏入咖啡產業以前,我曾經在銀行裡上班。但是,命運隨即開拓一條全然不同的道路給我:我墜入了愛河、還結婚了!當時的我怎樣都想不到,自己的人生會有180度的大轉彎。我的先生是第三代咖啡莊主,他對咖啡充滿濃厚熱情,這也是為何我會被他吸引的原因。幾年以後,我離開金融業,投身到我這輩子最熱愛的工作中。

當我不忙著照顧咖啡的時候,會聽些音樂、跳支舞或騎單車四處逛逛。

未來期望

希望我們可以發展成眾所皆知的咖啡出口公司,生產高品質的咖啡,且希望未來有一天,這間公司可以傳接給我的女兒們。
