我們盡可能在新月及滿月的時候收成,因為這個時候的櫻桃特別多汁,帶有蜂蜜香甜,隨後進行緩慢的日曬乾燥。

我們從2008年開始後製處理咖啡,包含了微量的精品咖啡。在這幾年內我們不斷的創新及精進自己的種植及加工技術,在不破壞自然條件下透過良好的田間管理來達到高質量的咖啡。

一生志向從小就確定了

我對小時候的記憶非常深刻,因為總是環繞在咖啡農地裡,父母從小就教導我要愛護這片土地,用心去照料每一個種子,從那時候開始我對咖啡就充滿了極大的熱情,也是從那時候開始學習種植及處理咖啡,這些跟農業相關的技法已經牢牢刻印在我腦海裡,是我一生中最美好的記憶。

1995年,我在我父親的土地上開始了我自己的咖啡莊園,從規劃整個莊園的配置及動向,要怎麼設計溝渠和排水溝以疏散多餘的水還有劃定木材樹及分配種植水果、蔬菜的區塊,到苗床及苗圃的照料與追蹤,所有的事都由我一手包辦,非常的累但我感到開心跟滿足。

整個農場都有遮陰樹,有十多種栽培物種以及周圍的原生植物,形成的微型氣候為許多鳥類提供了非常優質的生態環境,在這裡可以看見翡翠巨嘴鳥、褐頭擬椋鳥、綠眉翠鴗等等鳥類。

家人的支持

我從父親身上學到了跟咖啡品質有關的一切,因此我非常重視咖啡品種,阿拉比卡種是最有淺力種植出高品質咖啡的。

這些年來家人的支持對我來說非常重要,因為照顧農莊世間非常辛苦的事情,需要投入大量的時間跟精力,他們在我身邊鼓勵我追尋我的夢想,讓我的夢想成真。

加入COMSA大家庭

2004年我們加入了瑪爾卡拉有機咖啡公司COMSA,開始參與很多訓練,增加了我們對環境的責任感及敏感度,也增強了我們對精品咖啡的興趣。在2008年,我們透過COMSA的協助下獲得了有機認證,也開始生產微量的水洗精品咖啡豆,杯測分數最高有達到89分。

目前我們擁有公平貿易、鳥類友善等的認證。我的妻子與孩子也已經是COMSA的成員,也擁有自己的咖啡農地並獲得了多項的證書。我的兒子Rommel Adnan還特別學習了咖啡杯測,在咖啡品飲的知識及經驗上成長了非常多,透過這些技能搭配上家族傳統的種植方式,激盪出更多創新的思維,希望能夠生產出這個產區最好的咖啡。

Our passion for coffee, passed down through generations, has led us to perfect the art of growing and processing premium Arabica beans. We harvest at the perfect time, using the lunar calendar, to ensure the coffee is infused with the perfect amount of honey and fruit flavors. And our dedication to sustainability and tradition is reflected in our slow, natural drying process and use of organic and fair trade practices. Welcome to our Honduran Coffee farm, where the beauty of nature and the love for coffee collide. As you wander through our lush, green hills, surrounded by the sweet aroma of coffee blossoms in the air, you'll notice the care and attention to detail that goes into every step of the coffee-growing process. From the over 10 cultivated species of shade trees to the native plants that create a microclimate ideal for a variety of birds, including the Emerald Toucan, Oropendolas, Torogoz, Zorzal, Zanate, Sparrowhawks and others, our farm is a haven for both coffee and nature enthusiasts alike.

Our family's passion for coffee dates back to my childhood, growing up on the family farm. My parents instilled in us a love for the land and nature and since then, my brothers and I have dedicated ourselves to the art of growing and processing coffee. In 1995, I established my own farm, using the knowledge passed down from my father to produce high-quality Arabic varieties of coffee with exceptional potential.

But our commitment to coffee doesn't stop there. We strive for sustainability and harmony with nature, ensuring that each bean is grown with the utmost care and attention to detail. Our support system of family, including my wife and children, has been instrumental in our success, inspiring us to dream and make those dreams a reality. We're proud members of Organic Coffee Marcala COMSA, certified organic, Fair Trade, and Bird Friendly, continuously innovating and improving to produce the best Honduran coffee for you to enjoy.
